- 2 garlic cloves, minced
- 1 tablespoon ginger paste
- 1 tablespoon garam masala
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 cup plain yogurt
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped fresh mint
- 1/4 cup vegetable oil
- 2 bay leaves
- 4 green cardamom pods
- 4 whole cloves
- 1 cinnamon stick
- 1/4 teaspoon saffron threads
- 1/4 cup milk
Instructions:
1) Rinse the basmati rice until the water runs clear, then soak it in water for 30 minutes.
2) In a large pot, bring 4 cups of water to a boil. Add the soaked rice and cook until it is partially cooked, about 7 minutes. Drain the rice and set it aside.
3) In a large skillet, heat the vegetable oil over medium-high heat. Add the onion and cook until it is translucent, about 5 minutes.
4) Add the garlic and ginger paste, and cook for another minute.
5) Add the chicken and cook until it is browned on all sides.
6) Add the garam masala, cumin powder, coriander powder, turmeric powder, chili powder, and salt. Stir until the spices are evenly distributed.
7) Add the plain yogurt, cilantro, and mint. Stir to combine.
8) In a small bowl, mix the saffron threads with the milk.
9) In a large pot, layer half of the rice on the bottom. Sprinkle half of the saffron-milk mixture over the rice.
10) Add the chicken and spice mixture on top of the rice.
11) Layer the remaining rice on top of the chicken. Sprinkle the remaining saffron-milk mixture over the rice.
12) Add the bay leaves, green cardamom pods, cloves, and cinnamon stick on top of the rice.
13) Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes.
14) Once the rice is fully cooked and fluffy, remove the lid and stir gently.
15) Serve the Chicken Biryani hot with raita and your choice of sides.
