What are the Ingredients used in Preparing Mutton Rogan Josh?

Here we are going to share with you the ingredients that can be used in preparing this dish.

1) 500 grams Mutton , with bones, cut into medium pieces1 cup Curd (Dahi / Yogurt) Salt , as required
2) Mustard oil , as required For whole spices
3) Black cardamom (Badi Elaichi)
4) 4 Cardamom (Elaichi) Pods/Seeds
5) 1 inch Cinnamon Stick (Dalchini)
6) 1 Bay leaf (tej patta)
7) 1/2 teaspoon Black pepper powder
8) 1 teaspoon Fennel Powder
9) 1/2 teaspoon Asafoetida (hing)
10) 2 teaspoons Kashmiri Red Chilli Powder
11) 1/2 inch Ratan jot (alkanet) , (infuse it in heated oil)For marination
12) 1 teaspoon Fennel seeds (Saunf)
13) 1/4 teaspoon Cinnamon Powder (Dalchini)
14) 1 teaspoon Kashmiri Red Chilli Powder
15) 1/2 teaspoon Black pepper powder
16) 1/2 teaspoon Cardamom Powder (Elaichi)

How to Prepare Mutton Rogan Josh

1) First of all, Wash Mutton with water properly and drain the water.
2) Now take a pressure cooker, put ghee in it, and add cinnamon stick, cardamom, bay leaf, and cloves for a few minutes.
3) Slice a few tomatoes and put it in the pressure cooker. It will give flavor to the mutton rogan josh.
4) Saute the ingredients till it turns into golden color. It will take 1-1/2 hours.
5) Now Fry meat till it turns brown and adds a cup of water to it.
6) Add the red chilies & saffron into the meat & stir it well for 1-2 minutes.
7) Take a bowl of curd and mix it well in the mixer. Once done add it to the pressure cooker.
8) Continue stirring it until it gets reddish
9) Now keep cooking it until the gravy starts leaving the oil
10) Add 1 cup of water and also add additional spices such as cardamom powder, ginger powder. Mix it well for a few minutes.
11) Cook the mutton with a Cook pressure cooker lid
12) Cook it on a pressure cooker until it gives enough whistles and mutton gets tender.
13) Once the mutton gets tender sprinkle a tablespoon of coriander leaves, mix well. Cook for 2-3 minutes on low flame. Switch off the flame.
14) Now your Mutton Rogan Josh is ready to be served with Rotis or Butter.
