1) Chopped mutton cubes (qty should be 1kg)
2) Some amount of ghee
3) Cumin seeds
4) Asafoetida
5) Black cardamom
6) Peppercorns
7) Red chilli
8) Coriander powder (1 ¼ teaspoon)
9) Saffron
10) Fennel seeds powder (1 ½ tablespoon)
11) All purpose flour ( 1 ¼ tablespoon)
12) Salt as per taste
13) 2 ½ tablespoon of milk
14) Little amount of water
15) Hung curd
16) Three Coriander leaves

 

How to cook mutton rogan josh at home in simple and easy steps:

1) In the initial phase, prepare the saffron milk by mixing saffron in the milk.
2) Alongside, put some ghee in the pressure cooker and heat it for sometime.
3) You can mix whole spices in the ghee and heat/fry them for a while.
4) Afterwards, add red chillies, asafoetida, cumin seeds in the ghee and fry everything for sometime.
5) Now add mutton pieces carefully in the mixture and stir them properly.
6) Cover the cooker with the lid and leave the mutton in a medium flame so that the pieces could be cooked.
7) After 10 minutes,when the mutton becomes light brown, add water in the mixture and stir the mixture with spices.
8) These spices will be absorbed by the pieces and cook the mutton for sometime in a high flame.
9) Now the usage of yogurt comes into picture.
10) Take a small skillet and add all purpose flour, yogurt or curd and blend the mixture properly.
11) From steps 1 to 3, take this mixture of saffron milk and add all the spices in the yogurt and mix them well.
12) Now add everything in the pressure cooker and whip them well with a ladle and cook the mutton for sometime in the mixture.
13) Now add 1 or 2 cups of water in the pressure cooker and cook the mutton in a low flame for a few minutes.
14) Stirring should be done meanwhile to avoid stickiness with the surface of the cooker.
15) Once done ,embellish it with coriander leaves and serve this curry with naan or chapati to your loved ones.
