How to Make Chole Bhature?

1) First you need to rinse Chickpea in enough water in 7-8 hours so they get properly boiled.
2) Next Day their size will increase, now you need to drain the water.
3) Now take a pressure cooker and put chickpeas in it. Add 3 cups of water and 1/4 salt to it and let them get cooked. You can also put baking soda in it for color.
4) Now give 10-12 whistles to Chickpeas in a pressure cooker to make them tender and nicely cooked.
5) Once Chickpeas are sufficiently cooked, you can drain the water and put them aside.

6) Take a pan add oil, cinnamon, bay leaf, cumin seeds, cloves, whole peppercorns, green and black cardamom.
7)Once it gets brown you need to chopped onions and salt to it. Now add chopped ginger and garlic.
8) You can also add , chili powder, turmeric coriander powder, cumin powder, asafoetida, and salt. You can fry the ingredients together well to enhance the flavors of your dish.
9)For deglazing the pan add a little water.
10)Now the time has come to add masala in Boiled Chickpeas
11) After stirring well add tomatoes, little sugar, and salt to the chole.
12)You can add ajwain, green chilies, and water for the base.

14)Simmer the chole gently for an hour and cover it.
15) You can add lime juice and a dollop of butter to it.

How to Prepare the Bhaturas:

Ingredients to Prepare Bhaturas
All-Purpose Flour, Suji, 1/2 tablespoon Ghee, ½ tablespoon granulated fine sugar, 1/2 baking soda, 1/2 curd, 1/2 tablespoon salt as required.

1) Add All-Purpose Flour, baking soda, & salt to a mixing bowl. Now you can Suji and sugar to it.
2) Add Yogurt with sifted ingredients
3) You need to knead All-Purpose flour with an adequate amount of water into it.
4) Leave the dough for 2-3 hours.
5) Divide dough into equal sizes and Roll each ball between your palms to a round shape.
6) Deep fry till golden browns, like a puri.
7) Finally your Bhature is ready to serve.
